Ingredients:
Tuna Steak: 2 (6 oz) steaks
Sweet Potatoes: 2 medium (peeled and cubed)
Asparagus: 1 bunch (trimmed)
Olive Oil: 3 tbsp (divided)
Garlic: 3 cloves (minced)
Butter: 2 tbsp (unsalted)
Milk or Cream: 2 tbsp (for the mash)
Salt and Pepper: to taste
Paprika: 1/2 tsp (optional for sweet potatoes)
Bourbon: 1/4 cup
Brown Sugar: 2 tbsp
Soy Sauce: 1 tbsp
Lemon Juice: 1 tbsp
Honey: 1 tbsp
Step 1: Make the Sweet Potato Mash
Boil the Sweet Potatoes: Place the cubed sweet potatoes in a pot of salted water. Bring to a boil and cook for 12-15 minutes until tender.
Mash: Drain the potatoes, then mash with butter, milk or cream, salt, pepper, and a sprinkle of paprika (optional) until smooth and creamy. Set aside.
Step 2: Cook the Asparagus
Sauté: In a pan, heat 1 tbsp olive oil over medium heat. Add asparagus and sauté for 3-4 minutes until tender but crisp. Season with salt, pepper, and a squeeze of lemon. Set aside.
Step 3: Sear the Tuna Steak
Season: Lightly season tuna steaks with salt, pepper, and a drizzle of olive oil.
Sear: Heat 1 tbsp olive oil in a pan over medium-high heat. Sear the tuna for 1-2 minutes on each side for medium-rare (adjust for desired doneness). Remove from pan and let rest.
Step 4: Make the Bourbon Glaze
Deglaze: In the same pan, add bourbon and cook for 1 minute to burn off the alcohol.
Reduce: Add brown sugar, soy sauce, honey, minced garlic, and a squeeze of lemon. Stir and cook for 2-3 minutes until thickened and glossy.
Step 5: Assemble and Serve
Plate: Scoop a portion of creamy sweet potato mash onto the plate. Place the seared tuna steak on top and drizzle generously with bourbon glaze.
Side: Arrange the sautéed asparagus alongside.
Garnish (Optional): Add a sprinkle of fresh parsley or lemon zest for a vibrant finish.
