Sweet Heat Jerk Cod Tacos with Caramelized Bananas

Ingredients

For the Cod:

  • 2 cod fillets

  • 1 tbsp jerk seasoning (Walkerswood Brand)

  • 1 tsp smoked paprika

  • ½ tsp garlic powder

  • ½ tsp onion powder

  • ½ tsp sea salt

  • ½ tsp black pepper

  • 1 tbsp olive oil

  • 1 tbsp fresh lime juice


For the Slaw:

  • 1 cup shredded red cabbage

  • ½ red onion, thinly sliced

  • ¼ cup cilantro, chopped

  • 1 tbsp lime juice

  • ½ tsp salt

  • ½ tsp black pepper

  • ½ tbsp honey or maple syrup


For the Sauce (Jerk Aioli):

  • 2 tbsp mayo (or Greek yogurt for a lighter option)

  • ½ tbsp jerk seasoning

  • ½ tsp lime juice

  • ½ tsp garlic powder


For Serving:

  • Warm tortillas (corn or flour)

  • Avocado slices

  • Extra lime wedges

  • Pickled red onions (optional)


Caramelized Bananas (No Salt)

Ingredients:

  • 1 ripe banana, sliced diagonally

  • 1 tbsp butter or coconut oil

  • 1 tbsp honey or brown sugar (optional, for extra caramelization)

  • ¼ tsp cinnamon (optional, enhances flavor)


Instructions:

  1. Heat butter or coconut oil in a pan over medium heat.

  2. Add banana slices in a single layer.

  3. Cook for 1-2 minutes per side, until golden and caramelized.

  4. If using, drizzle a little honey or brown sugar in the last 30 seconds to deepen the caramelization and remove from heat.


How to use in Jerk Cod Tacos:

  • Layer the caramelized bananas on top of the jerk cod in your taco for a sweet, smoky balance.

  • Or, serve them on the side as a tropical-inspired topping option.
